Process : After picking the ripest drupes and hand selecting them this Pink Bourbon passed through 200h carbonic maceration in sealed barrels with inoculated geisha lactic bacteria.
Drying : 20 days sun parabolic dryer and then it is bagged in grain-pro andstored during 1month in a cooler warehouse to stabilize.

Words rom the importer : “Jose Joaquim, 2nd generation coffee farmer, owner of Primavera farm together with his father, they were producing mostly traditional washed coffees, with scores between 82 and 84 points. Last year we started a partnership between Aroma Nativo and Primavera farm and helped them to start to improve post-harvest practices, with controlled and experimental fermentations. On their 11 hectare farm we can find several varieties such as Pink Bourbon, Typica, Geisha, Pacamara, Catuai, Papayo, Bourbon Aji and Colombia, most of them are shade grown.”
“Pitalito is bordered by the Central and Eastern Andes, with most of the region located in the Magdalena Valley. This gives a great variation in climate, the temperatures in the farms vary from 17C to 23C. Most of these farms are between 1200 and 1800 m.s.n.m. They also benefit from the volcanic soil.
