Whole beans from the Finca Deborah from Boquete in Panama. One of our guests described it as an uncatchable ghost. This coffee is one of our favorite in the world, season after season. It is a very subtle and complex coffee. When hot, it tastes very floral and fruity. As it cools down, it will keep its fruity side but turns into red fruits and gets sweeter. When cold, you will have a very pure jasmine flavor. The body is very soft.

Process : Washed, dried on 3-layers african beds. The day the cherries are harvested, they will go directly to the wet mill to be pulped. Then immediately, it will go to the african beds to dry.
